Le Selvole
Organoleptic characteristics
A wine with a deep ruby red color with garnet hues that increase with aging. The bouquet is vinous and herbaceous, with hints of vanilla and chocolate conferred by aging in small oak barrels. The palate is full-bodied,structured and round, with a moderate presence of tannins softened by aging.
Wine Pairing
It is a harmonious and well-structured wine that is suitable for ageing and goes well with red meat and game.
Vinification
Traditional red wine with extended maceration time on the skins, favouring the extraction of tannins and polyphenols. After ageing for about a year in steel tanks, the wine is placed in small oak barrels where it matures for about 12 months, depending on the vintage.
Vineyards
The grapes for this wine come from vineyards in Caprino. The growing methods are Pergola Doppia Veronese and Guiot.
