A sparkling wine obtained by the Martinotti (Charmat) method with a straw-yellow colour, which may have greenish hues, it has a medium-fine perlage with a good persistence of the rim. Its aroma is dry and decisive with hints of bread crust due to the second fermentation. The palate is cheerful, savoury and with good acidity.
Excellent as an aperitif but also paired with fish meals.
A traditional white wine, the harvest is brought forward to the second half of August in order to preserve good acidity. The first fermentation takes place at a controlled temperature of about 17°C, after which the wine is stored for about 60 days in steel tanks. Once clarified, it is placed in autoclaves where the second fermentation takes place for about 40 days.
The grapes come from vineyards located on the slopes of Monte Baldo in the Terre Rosse area at an altitude of approximately 500 metres above sea level. The cultivation system is the Pergola Doppia Veronese.
